Printables. What is more simple than using something that's already made, just push print and you have a useful and aesthetically pleasing product. Here are some of the printables I've found online:

These eating chart printables may prove useful with a difficult diner. You have to make the cute striped board yourself, but you can print the chart for free from Lil' Luna. I'm planning on printing it and laminating it on some pretty scrapbook paper to K.I.S.
