{ Fiesta Bean Bake - A Quick and Simple Meal }


Today I'm going to share a quick and easy meal to throw together. My friend Sarah served this to me and I've made it twice since; it's delicious and light on the prep work. So here we go, Fiesta Bean Bake.


Here's what you'll need:

1 lb Boneless Skinless Chicken Breast (if your chicken breasts are large, filet them into thinner pieces; this should be 4 servings)
3 c or 24oz Pico de Gallo salsa 
2 cans of black beans (use some of the liquid for flavor)
1 package of frozen corn

First preheat your oven to 375 degrees. Next, in a large bowl mix together the salsa, black beans and corn.


Place the chicken in an 8"x11" pan and pour the bean mixture over the chicken. Move the bean bake to the oven and bake it for 30-45 minutes (check your chicken to see when the juices run clear, I tend to overcook mine).


When your chicken is done, remove the casserole from the oven and voila! Dinner is served. You can go with something as simple as tortilla chips or rice as a side; if you've got the time and energy throw in a green salad.


Now this is just a base recipe, it's really a throw together kind of meal so go crazy experimenting. Add some cumin or garlic; maybe even some fresh cilantro. Play with the ratios of the salsa, beans and corn. Also, I am by no means a chicken cooking guru, so if you have a better temp and time for baking your chicken do it that way. If you're not watching your calories, and going purely for taste, you can always top it with guacamole, sour cream and shredded cheese too. Like I said, this is a base recipe; add what you like and make it your own.

This looks great...It might be the one you had already made...? Hope your having a great Vacation...Im eating all the vegetable...I think they are the white turnips..I have been eating then sliced with salsa...Its so good
